With my wife being sick and me having to blog our food I'm having to do a lot of cooking, and let me tell you she isn't complaining one bit, she's enjoying it. Tonight I made a dish from our emeals recipes that I've talked about in a previous post. I made Beef Kofta, this was something I had never had before but my wife thought it sounded like a dish from Pita Jungle so I gave it a try. It was really good. The only thing we altered was the recipe called for 2 meat patties inside the tortilla and we found that was a little overwhelming so we did one meat patty.
This was the first time we have ever cooked with chickpeas. The chickpea salad was very good and prompted us to do some research on chickpeas. The first thing we found was they were good for blood sugar control (bonus for my wife), as well as it helps us to feel fuller longer because of the high fiber content.
